December 12 | Chef David Castro Hussong

Join award-winning Guest Chef David Castro Hussong, the visionary chef behind Fauna, one of Mexico’s most celebrated dining destinations in Valle de Guadalupe. Born and raised in Mexico, Chef David honed his craft in the world’s most prestigious kitchens, including Noma, Eleven Madison Park and Blue Hill at Stone Barns. Drawing on these global influences and a deep connection to his Mexican heritage, Fauna has now earned international acclaim and recognition from The World’s 50 Best Restaurants. 

For one night only, this exclusive culinary journey will allow guests to enjoy a thoughtfully curated five-course dinner, showcasing the vibrant flavors, seasonal ingredients and rich culinary traditions of Mexico’s renowned wine country.

January 27 | Chef James Trees

As one of the leading voices in modern Las Vegas dining, a James Beard Award finalist and chef-owner of six acclaimed restaurants and bars, Chef James Trees has built a reputation for ingredient-driven cuisine and exceptional hospitality. He is best known for Esther’s Kitchen, which earned a Bib Gourmand in the 2026 MICHELIN Guide Southwest and has trained under chefs Eric Ripert, Michael Mina, Heston Blumenthal and Gordon Ramsey. 

Chef Trees brings his celebrated culinary perspective to Apex for a five-course pop-up dinner, offering guests the opportunity to enjoy cuisine inspired by the flavors and techniques that make his restaurant nationally acclaimed.

February 20 | Chef Walter Alvarado

Experience the flavors of Puerto Rico with acclaimed chef Walter Alvarado, whose culinary career has been shaped by some of the industry’s most respected kitchens.

From his early training under celebrated Chef Wilo Benet to working alongside José Andrés at Dorado Beach and contributing to the two-Michelin-star team at Minibar in Washington, D.C., Chef Alvarado has developed a style that honors Puerto Rican traditions while embracing contemporary technique. His cuisine continues to earn recognition for its creativity and sense of place as he serves as Executive Chef of The Potomac Hotel.
