Bo Uscharawadi scrambles to keep up with the lunch rush on December 10th at Shaka Shake, the poke bowl stall he operates inside The Market on Snow Creek Drive in Park City. He said the high schoolers have been cleaning him out, but that’s nothing compared to when the snow flies and hordes of starving skiers descend on him in search of healthy protein.
