PARK CITY, Utah — High West Distillery has released a limited run of Bottled in Bond Bourbon, produced in-house at its Wanship location in accordance with the Bottled in Bond Act of 1897.
The straight bourbon whiskey, made with a high-rye mash bill, meets federal requirements that mandate it be produced by a single distiller at one distillery during one distilling season, aged at least four years, and bottled at 100 proof in a federally bonded warehouse.
The bourbon features aromas of Honeycrisp apple, golden raisins, kumquat, graham cracker crust, wildflower honey, malted milk chocolate, toasted oak spice, and honeycomb. Tasting notes include peach and cherry cobbler, gingersnaps, roasted marshmallows, cocoa nibs, molasses, dried thyme, and charred oak, finishing with hints of grated almonds and brown butter, according to the distillery.
The new release is available at High West General Store in Park City and The Distillery in Wanship, and will roll out to select retailers nationwide later this month.
Founded in 2006, High West is Utah’s first legal distillery since 1870 and the world’s first ski-in, ski-out distillery. Its spirits are distributed in all 50 states and internationally.
