Three-Michelin star chef brings film-paired omakase to Park City
PARK CITY, Utah — For some diners, dinner and a movie is about to take on new meaning.
Three-Michelin-starred SingleThread’s upcoming residency at The Lodge at Blue Sky will pair a 12-course omakase dinner with an eight-part film series documenting the journey of ingredients from farm to plate.
The residency, titled “ThroughLine,” features Emmy-nominated filmmaker Justin Taylor Smith’s intimate portraits of the farmers, fishermen and artisans behind each dish. The films will screen as diners progress through their meal.

“ThroughLine is akin to witnessing a screenplay come to life,” says Chef Kyle Connaughton, who will host the dinners alongside his wife and Head Farmer Katina Connaughton.
The experience, limited to 14 guests per seating, runs February 13-17 and February 20-23, 2025. The three-hour dining experience will incorporate locally sourced materials and handcrafted Japanese dishware.
Two nightly seatings are available at 5 p.m. and 8:30 p.m., with prices starting at $400 per person. Optional wine pairings are available for an additional charge.
Beyond the dining room, the residency offers guided foraging with Katina Connaughton ($450) or heli-skiing adventures with Chef Kyle ($5,000).
Katina Connaughton’s eight-person foraging expeditions through the Wasatch Range double as walking seminars on sustainable farming. Participants learn to identify local flora while discussing how SingleThread’s Sonoma County farming practices adapt to Utah’s terrain. The $450 experience concludes with seasonal tea alongside a hands-on floral design workshop using foraged materials.
For thrill-seekers with deeper pockets, Chef Kyle Connaughton leads six-person heliskiing trips from the resort’s high-alpine yurt. The $5,000 day ends in the Speyside Yurt with après-ski bites paired with Macallan whiskey flights and cocktails.
