Blue Sky to launch Mexican street food pop-up

WANSHIP, Utah— The Lodge at Blue Sky is launching a sustainable pop-up stand, Tacocat, which will run June 27-August 31, from 6-9 p.m.

Guests can expect elevated Mexican street food on the Arena Lawn; just look for the brightly painted horse trailer. Lodge guests and locals can enjoy this new culinary adventure.

“My mom and I used to stop at Taco Tienda on Blackstone in Fresno, California, when I was a little kid,” Mike Phillips, owner of Blue Sky, said in a press release. “I got hooked on authentic street tacos right away. Tacocat is our Blue Sky casual homage to street tacos from Fresno to Tijuana.  There’s no better treat than a fish taco with a mezcal margarita on the lawn at the Arena.”

The menu was curated by Yuta’s Executive Chef, Jason Franey, and gives a nod to traditional Mexican cuisine with harvested produce from Gracie’s Farm, the onsite farm at The Lodge at Blue Sky.

The menu features vegetarian, pescatarian, and gluten-free options. Offerings include the Fat Cat Taco, featuring pork verde, or the UFO Taco, with tempura tofu, and the salsa bar boasts 14 different varieties.

The beverage menu is just as enticing with signature cocktails like The Vitamin ABC, made with carrot, orange, and silver tequila, and Gracie’s Green with celery, basil, kale, and reposado tequila. The beverage menu also offers non-alcoholic options, like paletas (popsicles) and jugo fresco (juice) of the day.

“We’re delighted to introduce this special culinary experience, Tacocat, to our guests. Our aim is to offer a fun and delicious dining experience that celebrates the things we value most-good friends, good food, and good times,” Joe Ogdie, general manager at The Lodge at Blue Sky, said in a press release.

Prices range from $5 à la carte tacos to family-style offerings at $50 per person. Tacocat will be open most Tuesdays, Wednesdays, and Thursdays. Tacocat takes a bold step towards sustainability by eliminating food waste, discarding single-use items, and upcycling furniture and glassware.
