PARK CITY, Utah — A new era of summer luxury has arrived in Deer Valley East Village as Grand Hyatt Deer Valley unveils the highly anticipated Sunspell Pool + Provisions. Opening in June, this 7,000-square-foot terrace oasis offers guests panoramic views of the Wasatch Mountains, indulgent poolside amenities, and a standout lineup of food, cocktails, music, and summer-long specials.

Open daily from 7 a.m. to 10 p.m., Sunspell blends style and serenity with its saltwater pool, oversized jacuzzis, nine private cabanas, and plush Italian chaises. Food and beverage service runs Sunday through Thursday from 11:30 a.m. to 6 p.m., and until 7 p.m. on Fridays and Saturdays.

Signature cocktails by Water Witch

In collaboration with Salt Lake City’s renowned cocktail bar Water Witch—a James Beard Award finalist for Outstanding Bar—Sunspell’s beverage program promises vibrant and playful poolside refreshment. Highlights include the Curacao Cowboy, a grapefruit margarita, and a Saratoga ginger swizzle for non-drinkers. The menu features inventive tropical twists like clarified mezcal cocktails, coconut oil gin sours, and several all-vegan and spirit-free options.

Summer fare by Chef Alessandro Silvestro

Drawing from the terrace’s own garden, Chef Alessandro Silvestro brings bright, summer-forward flavors to the poolside menu. Guests can enjoy dishes like pineapple stir fried rice, hamachi crudo, grilled skewers, and chilled watermelon salad. Seasonal seafood and ripe strawberries add even more summer character to the offerings.

Live music and DJ sets

Whether it’s daytime lounging or a golden hour unwind, music sets the tone at Sunspell. Guests can catch mellow EDM sets, weekend performances by the Nate Robinson and Will Baxter Trios, and exclusive sunset mixes curated by Las Vegas nightlife veteran DJ Mighty Mi.

Access and reservations

A limited number of resort day passes are available for non-hotel guests, including access to lounge seating, locker rooms, the fitness center, and parking. With demand expected to be high, cabana and daybed reservations are encouraged.
