New year, new menus: Breakfast is served at Aubergine Kitchen, Don Gallo

PARK CITY, Utah — Parkites have two new brunch options to help ring in 2024: Aubergine Kitchen in Kimball Junction and Don Gallo on Main St. Aubergine Kitchen, which recently opened in December, rolled out its new breakfast menu Jan. 2. Don Gallo opened its new menu over New Year’s Eve.

Aubergine Kitchen, which is known for its healthy menu options including nutrient dense foods and no added sugars, will now be open from 7 a.m. to 9:30 p.m. The menu will range from savory to sweet, along with gluten free/dairy free/vegan options.

Don Gallo, a contemporary Mexican restaurant that touts its sustainable and locally sourced ingredients, launched an eclectic winter breakfast menu including Mexican french toast and a plethora of breakfast burrito and quesadilla options. Don Gallo business hours are 8 a.m. to 9 p.m. daily.
