Sundance Mountain Resort to host award-winning pop-up
SUNDANCE, Utah — If you’re a foodie (or just a fan of delectable eats), you won’t want to miss the arrival of Takibi. This award-winning Japanese restaurant from Portland is popping up at the Sundance Mountain Resort from June 16-25.
The Takibi pop-up will be held at the Owl Bar, where diners can enjoy a selection of Takibi Executive Chef Cody Auger’s most popular dishes, including the albacore warayaki with tosazu, ginger, and negi; chicken karaage with shio koji and lemon; black cod, charcoal grilled with chickpea miso; saba shioyaki, grilled mackerel with lemon and daikon oroshi; and tofu donuts.
In addition to Takibi’s mouth-watering menu, Bar Manager Alexandra Anderson brings some serious mixologist skills to the table. Her creations feature ingredients from Utah and Japan; Anderson will be bartending during opening weekend.
“We believe that true magic flourishes when two contrasting ideas come together in harmony, and this collaboration is a beautiful example of that,” said Kurt Berman, Sundance’s Vice President of Hospitality, in a press release. “When the precision of fine Japanese dining unites with the rustic nature of Sundance Mountain Resort, you suddenly have this exquisite memory you wouldn’t be able to replicate anywhere else in the world. This collaboration ignites the senses on all levels, and we look forward to featuring Takibi in the Tree Room.”
Known for its innovative cuisine and developed by Snow Peak, a renowned Japanese outdoor lifestyle brand, Takibi has been featured in Esquire Magazine’s list of America’s best new bars in 2022, earned a Sunset Travel Award 2022, and also secured a spot on Portland Monthly’s Top 50 restaurants list.
