Dine with a view: Italian classics in the mountainside
DEER VALLEY, Utah —Attention, foodies; St. Regis welcomes a new culinary delight from Chef Matthew Harris, La Stellina. Harris brings his expertise in classic Italian cuisine to the table, from lasagna to pork chop saltimbocca.
“With the opportunity to open a new dining concept at the Snow Park Residences phase of the St. Regis Deer Valley, the ownership group had a desire to bring an upscale and family-friendly Italian American concept to the community,” Harris said.
“I’ve always been a fan of that style of food and spent a lot of time in Manhattan and Boston, so I loved the opportunity to explore that while also blending it with my experiences throughout Italy.”
You may have already tasted Matthew Harris’ culinary style if you have dined in the area. His impressive track record includes Tupelo, RIME Raw Bar, and Wild Ember BBQ.
“Our goal is to serve these recipes that people are familiar and nostalgic about and have memories of sharing with their families, and just taking them to the next level in quality and flavor while they make new memories while they are dining with their families,” said Harris.
The menu at La Stellina is like a love letter to Italy, with nods to Italian culinary traditions. The menu celebrates the classics, from the homemade pasta to the perfectly grilled meats.
“So much of Italian cuisine is steeped in family and history, and really letting exceptional ingredients shine in traditional recipes,” Harris said. “We spent a lot of time with Italian home cooks called cesarines who are all about keeping those traditional techniques and ingredients going strong. For execution we had to adjust to produce more volume, and also quirks of our environment – the pizza dough recipe is inspired by one from Naples, but adjusted for our lower humidity and higher altitude.”
